• 2 cups finely chopped kale
  • 3 to 4 cups chopped romaine lettuce
  • 1 ripe tomato
  • 4 large dried figs, stemmed and sliced thin
  • 2 tbsp. sliced almonds

Dressing Ingredients:

  • 1 tbsp. extra-virgin olive oil
  • 1 tbsp. freshly squeezed lemon juice
  • Salt to taste


  1. Put the kale into a medium sized bowl and pour the dressing on top of the kale
  2. Massage the dressing into the kale and the kale marinate for about 20 minutes
  3. Add the lettuce, tomato, figs and almonds with the kale and mix thoroughly
