This week we’re switching it up with another recipe!  Been growing beets in your garden?  Give this awesome salad a go.  There are plenty out there but we’re a big fan of this one.  It may seem like a long time to wait for a salad but we promise you’ll be that much happier when you’re enjoying the fruits vegetables of your labour!


Prep time 30 min
Ready in 2 hours.

Ingredients :
6 Large Beets

1/4 Cup Olive Oil

Salt and Pepper

Spinach Leaves

1/2 Red Onion

1 cup Feta Cheese (crumbled)

1/2 cup Balsamic Vinegar
1/2 cup Extra Virgin Olive Oil
1 tablespoon Dijon Mustard




1. Preheat oven to 375 degrees F (190 C)

2. Place 6 Beets in bowl and toss in 1/4 cup olive oil, salt, and black pepper. Lay out 2 large squares of aluminum foil placing 3 beets in the centre.  Then fold the aluminum foil around them, sealing the beets. Place the packets into a baking dish.

3. Bake in the preheated oven until tender, 1 to 1 1/2 hours. Time will depend on the size of your beets. Pierce a beet with a fork after an hour to check for tenderness. Open the foil, and allow the beets to cool until they can be handled; peel, and slice.

4. Lay out the spinach and sprinkle pieces of beets and chopped red onion; top with crumbled feta.

5. Whisk together balsamic vinegar, 1/2 cup of olive oil, and Dijon mustard until you have your preferred consistency. Pour over salad.

6. Share this recipe with your friends. 🙂
