KD’s Zucchini Bread – makes 2 loaves

  • 2/3 cup shortening
  • 2 2/3 cups sugar
  • 4 eggs
  • 4 cups shredded zucchini
  • 3 1/3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 2 teaspoons ground cloves
  • 2/3 cup raisins or dried cranberries
  • Option: 2/3 cup coarsely chopped nuts (walnuts or pecans)

1. Heat oven to 350° F.

2.Grease bottom only of 2 loaf pans, 9x5x3 inches.

3. Mix shortening and sugar in large bowl.  Add in eggs and zucchini, stir.  Blend in flour, baking soda, salt, baking powder, cinnamon and cloves.  Add the raisins or dried cranberries, and stir in chopped nuts if using.

4. Pour into pans.  Bake approximately 70 minutes.  Test- they are done when a wooden toothpick inserted in the centre & comes out clean.

5. Cool slightly before loosening sides with a knife and remove from pans.  Wrap tightly to store and keep moisture in.
